Healthy Snack {Frozen Yogurt Bites}

I have been trying to come up with different healthy snacks to have during the day. I love to have yogurt because it is just so refreshing. Well. I was starting to get tired of just eating it out of the little container. I decided to try something new with it by freezing drops of yogurt. They turned out to be AMAZING and I will be doing this a lot now! It was so simple to do and they are so yummy! They are way more refreshing then just eating it on a spoon.

  I just had to share this little trick with all of you so you can enjoy their Amazingness too!

To do this all you need is:
-A quart of yogurt - flavor of your choice
-Wax paper
-A scoop (I used a cookie scooper. It was nice to have the thing to help slide the yogurt off. A Spoon would work just fine too if you don't have one)
-A cookie sheet

To make them:

Cover the cookie sheet with wax paper. 

Next take your scooper and put little drops of yogurt on the wax paper.

Lastly, put them in the freezer!!

Wait just a couple of hours for them to freeze. Them remove from the freezer and ENJOY!!


To Store Them: 
Put in a freezer ziploc bag or a freezer tight container. Put them back in the freezer so they don't melt! Then you have a quick delicious snack on hand!

FYI: They do start to melt pretty fast so don't leave the whole bag or container of them sit out too long at room temperature!

Caramel Banana Muffins

My family and I recently threw a baby shower for my sister who is having her baby next week . We did a brunch for all who came. I was in charge of bringing some muffins. I wanted to bring something really fun and yummy. I went on pinterest to see what I could find and came across this Caramel Banana Muffin recipe. I knew that I had to make this. They just sounded delicious!!!

Here is the Recipe:

Caramel Banana Muffins:

1/2 cup chopped pecans
2 Tbs. sugar
1 tsp. ground cinnamon
1 3 oz. pkg. cream cheese, softened
1/4 cup butter, softened
2/3 cup sugar
1 egg
1 medium banana, peeled and mashed (1/2 cup)
1 tsp vanilla
1 1/4 cups all-purpose flour
3/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
2 Tbs. caramel-flavored ice cream topping
1 medium banana. peeled and thinly sliced (optional)
1 Tbs. butter, melted
Caramel-flavored ice cream topping (optional)

DIRECTIONS:

1. Line twelve 2-1/2-inch muffin cups or 6 jumbo (3-1/4-inch) muffin cups with paper bake cups. In a small bowl, mix pecans, 2 Tbs. sugar and 1 tsp. cinnamon.

2. In a large mixing bowl, beat cream cheese, softened butter and 2/3 cup sugar with an electric mixer until well combined. Add egg and beat well. Beat in mashed banana and vanilla until combined.

3. In another bowl, combine the flour, baking powder, baking soda and salt. Add to the banana mixture, beating on low speed until just combined.

4. Stir in 1/4 cup of the pecan mixture. Spoon half the batter into prepared muffin cups (1rounded Tbs. for each 2-1/2-inch muffin cup or 2 rounded Tbs. for each jumbo muffin cup). Drizzle 1/2 tsp. caramel topping over batter in each cup. Top with remaining batter. If you like, top each muffin with 2 thin slices additional banana, Drizzle each with a little melted butter and sprinkle with remaining pecan mixture.

**I chose not to add the slices of banana on the top. It think it would have been really yummy. I thought it lacked the banana taste a little bit, but they were still REALLY good!!


5. Bake at 375 degrees for 18 to 20 minutes or until a toothpick inserted in centers comes out clean. Cool pan for 5 minutes. Remove from pan, Serve warm drizzled with more caramel topping, if you like. Makes 12 standard or 6 jumbo muffins.

**With the caramel that I put on the top it made it so the muffins stuck in the pan. I had to use  knife to get them out of the pan. 


They were seriously So YUMMY!!! They were very moist and had really good flavor. Like I said above I did think they were lacking the banana flavor just a bit. Next time I will try putting the slices of banana on top and maybe even add more mashed banana to the mixture. 

DELICIOUS!!!

Rolo Cookies

These cookies are so YUMMY and the best part is they are so EASY to make!!! So I just had to share this recipe with all of you!

I just made them this past week for a baby blessing that was on Sunday. Most of the people there were very surprised to find the rolo in the middle. They had no idea they were going to bite into the yummy goodness:)



Here's what you will need to make them:


-1 Devil's Food Cake Mix
-1/2 cup Oil
-2 eggs
-1 bag of Rolo's

How to make them:

The fun part of this is having to unwrap all the rolo's!! OK not really, but the cookies are so worth it:) I do this first so I have it done and out of the way. Every time I have made this I have a few left over, but I still unwrap them all.
(Sorry, there is powered sugar on some of them!)

Pour the cake mix in a bowl. Add oil and eggs and mix together.

Next, you will cover the rolos with the dough. You don't need very much. Just enough to cover the rolo completely.

This next step is totally OPTIONAL! I actually have never done this before with these cookies, but since I was making this batch for the baby blessing I thought it would be fun to have a touch of white in with the cookie. So I then rolled them in powdered sugar.

Then you put them on a cookie sheet.
I pictured both in this picture to show you that you don't have to do the powered sugar if you don't want to!!

Then you will bake them at 350 degrees for 10 minutes. 
When you pull them out of the oven let them cool for a couple of minutes and then move them to a cooling rack or if you don't have that tin foil will do!
I do think they turned out pretty with the powdered sugar!

Lastly.....EAT AND ENJOY!!!!!


This recipe makes just over 3 dozen cookies.
