Chocolate Chip Pumpkin Cookies

One of my most favorite treats of fall are
Chocolate Chip Pumpkin Cookies.

There is nothing more that reminds me of Fall then a soft moist pumpkin cookie. 

So today I have a tasty and healthy recipe for you all!

Chocolate Chip Pumpkin Cookie:

Ingredients:
-1 cup canned pumpkin
-1/2 cup white sugar
-1/4 cup brown sugar
-1 Tbs vegetable oil
-1/2 cup unsweetened applesauce
-1 egg
-2 cups all purpose flour
-2 tsp baking powder
-2 tsp ground cinnamon
-1/2 tsp salt
-1 tsp baking soda
-1 tsp milk
-1 Tbs vanilla
-1 bag milk chocolate chips

Directions:
1. Combine the pumpkin, brown and white sugar, vegetable oil, applesauce and egg.

2. In a separate bowl, stir together the flour, baking powder, ground cinnamon and salt.

3. Dissolve the baking soda in the milk. Then pour into the wet pumpkin mixture.

4. Pour the flour mixture into the pumpkin mixture and mix well. Add the vanilla and chocolate chips.

5. Drop spoonfuls onto a greased cookie sheet and bake at 350 degrees for 10-12 minutes. {The recipe I did said 10 minutes, but I found that 12 minutes was better.} You won't be able to tell that they are "browning," but they will become firm.


These really were so delicious!! Everyone in the family loved them...including my 22 month old!
