Easy Mint Brownies

Earlier this week I showed you the banner I made for my sister in laws double baby shower. If you missed that you can go HERE to see it.

I also helped make some goodies for this shower. I wanted to share one of the recipes with you today because they were to die for Mint Brownies. Everyone loved them! 

I had been craving mint brownies for a long time and never made them, but for the shower I had an excuse to finally make them. I have never made mint brownies so this was a first. I found a recipe on Pinterest HERE, but also made my own adjustments...I tried to be really brave!!

Here is what you will need:




Easy Mint Brownies:

Ingredients:

     Brownies:
                  -1 Brownie Box Mix. Any brand you like.
                  -Ingredients called for on box for brownie mix
                  -1 cup Andes Chips

    Mint Frosting:
                  -1 container Vanilla Frosting. Any brand you choose.
                  -1/4 tsp. Mint Extract
                  -Few drops green food coloring

    Chocolate Glaze:
                  -1/2 bag Chocolate Chips
                  -1/4 tsp. Mint Extract
                  -1-2 tsp. water



Directions:

1. Heat oven as directed on brownie mix box for the size of pan you are doing. My pan size  was 8"x11". Grease the bottom of the pan. Then make the brownie mix as directed on box. Make sure to add 1 cup Andes Chips to the batter. Spread that in the pan. 

2. Bake according to the time on box for your pan. Let cool when done. 

3. In a small bowl, stir in the container of frosting, mint extract, and food coloring. Mix until well blended. When brownies are cooled, spread frosting over brownies.

4. In a  small saucepan put chocolate chips, mint extract, and water together. Put on medium heat, stirring constant mix and melt everything together.  When it melts, put the chocolate mixture in a baggie, cut the corner just a little bit and drizzled the chocolate over the frosting. Put in refrigerator for 30 minutes or until glaze is firm. 

5. Cut and Serve.
