"These potatoes are to die for!"
"These are something you would get at a restaurant!"
These are the kind of comments we get when we make these potatoes. Seriously! Because of this I have decided to share my hubby and I's secret recipe with all of you!!
Before I get to the recipe I have a confession to make. I am not a Chef. I am a cook. I really love to follow recipes. I am not adventurous in trying my own thing. My hubby loves to cook...he is like a chef to me. He has a hard time following recipes. I have learned from him to be more daring and adventurous when it comes to cooking food. He is the one that created this recipe and I helped him the first few times to make these potatoes, but I have made them many times since by myself and I am proud to say I have been really adventurous with the spices for the recipe and it turns out every time!
Now if you are curious
Here are the
ROASTED RED POTATOES:
Mmmm!! Don't they look so good?!?
Please don't be turned off from what I am about to show you for the recipe!
They truly are amazing!
The biggest thing is for this recipes is SPICES!
What You Will Need:
-5 lb bag of Red Potatoes {or however many you are wanting to make}
-1 cube Butter
-Spices:
The basic ones I like to use are:
*Hidden Valley Ranch Packet
*Minced Onions
*Garlic Salt
*Parsley
*Basil
*Thyme
*Pepper
If I have them on hand I like to also add:
*Salad Supreme
*Ground Mustard
*Italian Seasoning
*Season Salt
I don't have an exact measurement of what you should add of each. I just add little bits of everything in a bowl until it looks good. I do the full packet of ranch dressing mix and more of the dried onions. I just make sure there is an even mixture of "green" with all the white colors.
After you have gotten the spices mixed in a bowl, you will need to wash and cube the red potatoes. I put them in a strainer as I am cutting them because I do a quick rinse to get them wet so the spices will stick to them better.
Once you have those cut and rinsed, put them into a 9"x13" pan or whatever size you are making.
Next, you will pour your spice mixture onto the potatoes. Using your hands, mix the spices all around to get all the potatoes good and covered.
To determine if I have enough on there I look at the some of the potatoes individually so see how coated it is. The more its coated the better! A lot of times I find myself making a little more spice mixture to put on it after I have done the first one.
When you feel they are covered enough you are going to take a cube of butter and slice it up like this:
Then you will lay those out all around the potatoes.
Then you will bake them in the oven at 400 degrees for 1 hour or until fork goes in smoothly to the potatoes.
Tip: I usually stir them about 30 minutes into them baking to get the butter all over them again, especially the top ones!
They are seriously so scrumptious!!!
They go great as a side dish for chicken, steak, and pasta dishes!
And if you have leftovers they are really good with eggs in the morning for breakfast!
ENJOY!
